    Place the very ripe bananas in a large mixing bowl and mash thoroughly with a fork or potato masher until mostly smooth. A few very small pieces are fine. Measure if possible—you are looking for approximately 1.5 cups mashed banana.

Mellow Masala Tip / Notes

Use deeply spotted or almost black bananas for the best flavor and natural sweetness.

The combination of 0.25 cup date syrup and 0.25 cup pure maple syrup gives the loaf balanced sweetness without allowing either flavor to dominate.

Because both sweeteners are liquids, this version uses only 0.25 cup oil and normally requires no additional milk.

For a stronger Mellow Masala flavor, increase the cardamom to 0.5 tsp and add 0.25 tsp freshly grated nutmeg.

Storage, Freezing & Reheating

Allow the banana bread to cool completely before storing.

Keep it in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.

To freeze, slice the cooled loaf and place parchment between the slices. Store in a freezer-safe container for up to 2 months.

Thaw individual slices at room temperature or microwave for approximately 10–20 seconds. For the best texture, lightly toast refrigerated or thawed slices before serving.
