Ingredients

  • 3 cup 3 sprouted mung beans, soaked and steamed for 2 whistles
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 green 1-2 chilies, finely chopped (adjust to taste)
  • 2 tablespoons cilantro (coriander leaves)
  • 1 medium boiled potato, cubed
  • 1/2 cup curd (Preferably not too sour)
  • Spices:
  • 1/2 teaspoon black salt (adjust to taste)
  • 1/2 teaspoon chaat masala
  • 1/4 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon roasted cumin powder
  • Toppings:
  • 1 tablespoons green chutney (mint-coriander chutney)
  • 2 tablespoons red chutney (tamarind-date chutney)
  • 1/2 cup sev (crispy chickpea flour noodles)
  • 1 of Juice lemon
Instructions
    Prepare the Sprouts:

    Start by sprouting the mung beans. Soak 1 cup of mung beans in water overnight. The next day, drain the water and cover the beans with a damp cloth for 1-2 days, until sprouts start to appear.

    Once sprouted, rinse the mung beans thoroughly.

    Steam the sprouts in a pressure cooker with a little water for 2 whistles. The sprouts should be tender but still have a slight bite. Allow them to cool completely.

    Finely chop the onion, tomato, green chilies, and cilantro.

    Boil a potato until fork-tender, then allow it to cool before cutting it into small cubes.
